
Nutty Christmas Cake Recipe
This nutty, simple to make Christmas cake is a choice you can’t go wrong with.
Ingredients For Cake
- 1 teaspoon baking powder
- 175ml buttermilk
- 2 free range eggs
- 1 dry lemon rind, grated
- 1 dry orange rind, grated
- 175g unsalted softened butter
- 225g brown sugar
- 275g self-raising flour
- 225g fruit mince
- 2 tablespoon brandy
Toppings Ingredients
- 30g hazelnuts
- 40g blanched almonds
- 40g cashew nuts
- 140g red glace cherries
- 100g golden syrup
- Icing
- 100g icing sugar
- 2 teaspoon fresh lemon juice
- 20 cm cake pan
How to make

First, heat your oven to 160°C. While the oven is being heated, grease the base of the cake pan and line it with parchment paper.
Beat the butter and sugar in a bowl until the mixture is light and fluffy. Add flour, baking powder, buttermilk, and eggs. Stir the mixture.
Add the fruit rinds along with fruit mince and brandy. Stir before adding the mixture into the greased pan. Bake for one hour.
While the cake is baking, prepare the topping. Warm the nuts, cherries and golden syrup in a pan. Use medium heat – take care not to overcook the ingredients.
Spread the topping over the cake. Reheat for fifteen or thirty more minutes.
Let the cake cool. To check if the cake is done, insert a skewer into the center of the cake. If it comes out clean, your cake is done.
The last step is to take care of the icing. Add sugar to the fresh lemon juice. Using a piping bag, spray the juice over the cake. Your nutty Christmas cake is ready to serve.
